Weeknight naan pizzas
A garlic naan base, bubbling cheese and whatever vegetables are in the fridge. Big comfort, little effort.

The method

Heat the oven
Preheat the oven to 220°C, or 200°C fan-forced. Place a baking tray in the oven to heat.

Build your base
Spread each naan with passata, leaving a small border. Scatter over the mozzarella, capsicum, mushrooms and oregano.

Bake until bubbling
Carefully place the naan pizzas on the hot tray. Bake for 8–12 minutes, checking early, until the cheese bubbles and the toppings are cooked.

Finish and share
Drizzle with olive oil and scatter over basil. Rest for a minute, then slice and serve with a simple green salad.
